Pumpkin-Banana Pancakes

If you are not yet following my Instagram account (@the_model_foodie), be sure to go follow for some of my favorite recipes and tips! As promised in my most recent post, here is the recipe and directions for my spin on these healthy and easy pumpkin-banana pancakes!




-1 small banana

-1/2 cup egg whites

-2 tbsp. chocolate PB2

-1/4 tsp. baking powder

-sprinkle of nutmeg

-1/4 cup pumpkin puree

-1tbsp. apple butter

-(optional blueberries)



-Mash the banana and mix the egg whites in with it until there are as few chunks of banana as possible. 

-Add the baking powder, PB2, and a sprinkle of nutmeg.

-Heat a skillet. 

-Carefully spoon small amounts of the mixture into your skillet and flip once they began to fluff and bubble a little bit. (These are not going to be the same consistency of regular pancakes. The mixture will be a bit looser and so I recommend keeping your pancakes pretty small.)

-Remove from the skillet and place them on your plate.

-Next, for the pumpkin puree mixture (which I put on my pancakes) mix the pumpkin puree and apple butter together. 

-Simply spread the mixture on your pancakes and add any other fruit you may want.
